Directions:
To prepare Malay Chicken Biryani using Shan Spice Mix, follow these directions: Ingredients: 1 packet of Shan Spice Mix for Malay Chicken Biryani Masala 1 kg chicken, cut into pieces 750 grams basmati rice, soaked for 30 minutes 4 medium-sized onions, thinly sliced 4 tomatoes, finely chopped 1 cup yogurt 4 tablespoons cooking oil or ghee 2 tablespoons ginger-garlic paste Salt to taste Water as required Directions: Heat oil or ghee in a large cooking pot or deep pan. Add the thinly sliced onions and fry until golden brown. Remove half of the fried onions from the pan and set them aside for garnishing. In the same pan, add the ginger-garlic paste and cook for a minute until the raw smell disappears. Add the chicken pieces to the pan and cook on medium-high heat until they are browned on all sides. Empty the packet of Shan Spice Mix for Malay Chicken Biryani Masala into the pan with the chicken. Mix well to ensure that the spices coat the chicken evenly. Cook for a few minutes to allow the flavors to blend. Add the chopped tomatoes and cook until they become soft and mushy. In a separate pot, bring water to a boil. Add soaked basmati rice to the boiling water along with some salt. Cook the rice until it is 70% done. Drain the rice and set it aside. Now, add yogurt to the pan with the chicken and mix it thoroughly. Cook for another few minutes to combine the flavors. Layer the partially cooked rice over the chicken and masala mixture in the pan. Sprinkle some fried onions on top of the rice. Cover the pan tightly with a lid and cook on low heat for about 20-25 minutes, or until the rice is fully cooked and the flavors have melded together. Once the biryani is cooked, gently mix the rice and chicken together, ensuring that the rice grains remain intact. Serve the Malay Chicken Biryani hot with raita (yogurt dip) or salad.
